Ingredients
1 oz. grenadine
1 cup ice
4 oz. no-sugar added pineapple juice
2 oz. coconut rum, such as Malibu OR Rum Chata coconut cream liqueur
1 oz. water
1/2 oz. blue curaçao
Fresh fruit, such as strawberries and orange slices for garnish
Directions
Add grenadine to a clear cocktail glass filled with ice.
Next, combine pineapple juice and coconut rum in a glass measuring cup; slowly pour the mixture over the ice in the glass for the middle layer.
Now, in a separate measuring cup, combine the water with the blue curaçao, then slowly pour over the pineapple-rum layer.
Garnish with fresh fruit.
